INGREDIENTS FOR FOUR PEOPLE:<\/strong><\/p>\n (This makes one litre of soup)<\/p>\n PREPARATION:<\/strong><\/p>\n Infuse the shell black peel, kombu seaweed and miso in the mineral water.<\/p>\n When reduced to half litre, filter.<\/p>\n Finely chop and add the onions.<\/p>\n Leave to infuse removed from the heat.<\/p>\n Creamed carrot<\/strong><\/p>\n Cook the carrot with very little water and fleur de sel sea salt. Egg<\/strong><\/p>\n It can be poached or prepared at low temperature. For the latter method, immerse the whole egg for 40 minutes in water at a constant temperature of 65\u00b0. This achieves a perfect texture of proteins in the egg whites and yolk, achieving exceptional flavour. Presentation<\/strong>:<\/p>\n In a small deep bowl, add a few spoonfuls of the creamed carrot and \u201cplant\u201d the snow peas. \nDrain, reserving some of the cooking water.
\nBlend, emulsify with two tablespoons of extra virgin olive oil and a little cooking water.
\nCorrect the salt.
\nAdd a little pepper.
\nSlightly blanch the snow peas in boiling water.<\/p>\n
\nHeat the water to 90\u00ba, carefully open the eggshell and submerge until a film is created outwards. Remove the egg.<\/p>\n
\nPlace the low temperature (or poached) egg in the centre of the bowl.
