{"id":11016,"date":"2017-04-27T10:41:52","date_gmt":"2017-04-27T09:41:52","guid":{"rendered":"https:\/\/laabuelacarmen.com\/recetas\/sopa-japonesa-cebolla-negra-huevo-baja-temperatura\/"},"modified":"2023-01-24T13:42:00","modified_gmt":"2023-01-24T12:42:00","slug":"japanese-black-onion-soup-with-low-temperature-egg","status":"publish","type":"recetas","link":"https:\/\/laabuelacarmen.com\/en\/recetas\/japanese-black-onion-soup-with-low-temperature-egg\/","title":{"rendered":"Japanese black onion soup with low temperature egg"},"content":{"rendered":"<p><strong>INGREDIENTS FOR FOUR PEOPLE:<\/strong><\/p>\n<ul>\n<li>2 black onions<\/li>\n<li>1.5 litres mineral water<\/li>\n<li>Kombu seaweed sheet<\/li>\n<li>Half tablespoon white miso<\/li>\n<li>200 g snow pea shoots<\/li>\n<li>200 g carrots<\/li>\n<li>4 eggs<\/li>\n<li>2 tablespoons Arbequina extra virgin olive oil<\/li>\n<li>Fleur de sel sea salt to taste<\/li>\n<\/ul>\n<p>(This makes one litre of soup)<\/p>\n<p><strong>PREPARATION:<\/strong><\/p>\n<p>Infuse the shell black peel, kombu seaweed and miso in the mineral water.<\/p>\n<p>When reduced to half litre, filter.<\/p>\n<p>Finely chop and add the onions.<\/p>\n<p>Leave to infuse removed from the heat.<\/p>\n<p><strong>Creamed carrot<\/strong><\/p>\n<p>Cook the carrot with very little water and fleur de sel sea salt.<br \/>\nDrain, reserving some of the cooking water.<br \/>\nBlend, emulsify with two tablespoons of extra virgin olive oil and a little cooking water.<br \/>\nCorrect the salt.<br \/>\nAdd a little pepper.<br \/>\nSlightly blanch the snow peas in boiling water.<\/p>\n<p><strong>Egg<\/strong><\/p>\n<p>It can be poached or prepared at low temperature. For the latter method, immerse the whole egg for 40 minutes in water at a constant temperature of 65\u00b0. This achieves a perfect texture of proteins in the egg whites and yolk, achieving exceptional flavour.<br \/>\nHeat the water to 90\u00ba, carefully open the eggshell and submerge until a film is created outwards.
