{"id":10946,"date":"2017-04-27T10:43:44","date_gmt":"2017-04-27T09:43:44","guid":{"rendered":"https:\/\/laabuelacarmen.com\/recetas\/bunuelos-garbanzos-cebolla-negra-granada-pistachos\/"},"modified":"2023-01-24T13:40:47","modified_gmt":"2023-01-24T12:40:47","slug":"chickpea-black-onion-pomegranate-and-pistachio-fritters","status":"publish","type":"recetas","link":"https:\/\/laabuelacarmen.com\/en\/recetas\/chickpea-black-onion-pomegranate-and-pistachio-fritters\/","title":{"rendered":"Chickpea, black onion, pomegranate and pistachio fritters"},"content":{"rendered":"<div class=\"field field-name-body field-type-text-with-summary field-label-hidden\">\n<div class=\"field field-name-body field-type-text-with-summary field-label-hidden\">\n<div class=\"field-items\">\n<div class=\"field-item even\"><strong>Ingredients:<\/strong><\/div>\n<ul>\n<li class=\"field-item even\">2 black onions<\/li>\n<li class=\"field-item even\">500 g cooked chickpeas<\/li>\n<li class=\"field-item even\">100 g chickpea flour<\/li>\n<li class=\"field-item even\">1 medium pomegranate<\/li>\n<li class=\"field-item even\">150 g pistachios<\/li>\n<li class=\"field-item even\">1 tablespoon Picual extra virgin olive oil<\/li>\n<li class=\"field-item even\">300 g pumpkin<\/li>\n<li class=\"field-item even\">Fleur de sel sea salt<\/li>\n<li class=\"field-item even\">Pepper<\/li>\n<li class=\"field-item even\">Orange peel 1 teaspoon coffee<\/li>\n<li class=\"field-item even\">2 green cardamom pods<\/li>\n<\/ul>\n<div><\/div>\n<div class=\"field-item even\">\n<p><strong>Preparation:<\/strong><\/p>\n<p>Pur\u00e9e the chickpeas in a sieve, separating the skins.<br \/>\nChop and add the pistachios, reserve a few for garnish.<br \/>\nRemove the pomegranate seeds from the shell, reserve a few for garnish.<br \/>\nAdd half the pomegranate.<br \/>\nGrind the cardamom with a little salt and pepper.<br \/>\nSeason the dough.<br \/>\nAdd 1 tablespoon Picual extra virgin olive oil.<br \/>\nAdd peeled and finely chopped black onion.<br \/>\nMake not-very-large balls (spread oil on your hands).<br \/>\nLeave to cool.<br \/>\nPeel pumpkin and roast at 180\u00ba until tender.<br \/>\nAdd salt, oil and grated orange peel.<br \/>\nEmulsify and keep cold.<br \/>\nRemove the balls (the should be more solid).<br \/>\nRoll in chickpea flour.<br \/>\nFry.<br \/>\nOnce browned, remove them and leave on absorbent paper.<\/p>\n<p><strong>Presentation of the dish:<\/strong><\/p>\n<p>Place a little of the emulsion pumpkin on the base with a spoon.<br \/>\nPlace a fritter on top.<br \/>\nGarnish with pomegranate, pistachio and chopped black onion.<br \/>\nThese chickpea fritters have a fresh, citrus and exotic flavour. They fill the mouth with nuances of flavour, featuring chickpeas because of the importance of eating vegetables.<\/p>\n<p>Recipe suitable for vegans\/vegetarians and those with coeliac disorders.
