Ingredients:<\/strong><\/div>\n

  • 2 black onions<\/li>\n
  • 500 g cooked chickpeas<\/li>\n
  • 100 g chickpea flour<\/li>\n
  • 1 medium pomegranate<\/li>\n
  • 150 g pistachios<\/li>\n
  • 1 tablespoon Picual extra virgin olive oil<\/li>\n
  • 300 g pumpkin<\/li>\n
  • Fleur de sel sea salt<\/li>\n
  • Pepper<\/li>\n
  • Orange peel 1 teaspoon coffee<\/li>\n
  • 2 green cardamom pods<\/li>\n<\/ul>\n

    Preparation:<\/strong><\/p>\n

    Pur\u00e9e the chickpeas in a sieve, separating the skins.
    \nChop and add the pistachios, reserve a few for garnish.
    \nRemove the pomegranate seeds from the shell, reserve a few for garnish.
    \nAdd half the pomegranate.
    \nGrind the cardamom with a little salt and pepper.
    \nSeason the dough.
    \nAdd 1 tablespoon Picual extra virgin olive oil.
    \nAdd peeled and finely chopped black onion.
    \nMake not-very-large balls (spread oil on your hands).
    \nLeave to cool.
    \nPeel pumpkin and roast at 180\u00ba until tender.
    \nAdd salt, oil and grated orange peel.
    \nEmulsify and keep cold.
    \nRemove the balls (the should be more solid).
    \nRoll in chickpea flour.
    \nFry.
    \nOnce browned, remove them and leave on absorbent paper.<\/p>\n

    Presentation of the dish:<\/strong><\/p>\n

    Place a little of the emulsion pumpkin on the base with a spoon.
    \nPlace a fritter on top.
    \nGarnish with pomegranate, pistachio and chopped black onion.
    \nThese chickpea fritters have a fresh, citrus and exotic flavour. They fill the mouth with nuances of flavour, featuring chickpeas because of the importance of eating vegetables.<\/p>\n
